About Me:
The story: I hail from the Emerald Isle, land of greenery, sheep, pubs and Guinness. I hear you ask, what the f... does an Irish guy know about 1) food and 2) healthy food, a contradiction in terms, ya. It's not all potatoes and sheep anymore, well in most places anyway but especially since I moved to the States. Since I started cooking I've worked in some great places in Ireland & London so I've gotton a broad range of styles in the bag. LA being the mecca of health and fitness (I saw that in Golds gym) has enabled me to focus more on simple, healthy, fresh food which stems from the way I eat. So if you want some great easy recipes and ideas I'm your man.

What are your goals?
My goal is simple: To be a motivator for healthy living. On my website I showcase homecooked, tasty, fresh & HEALTHY food recipes along with fitness tips and other lifestyle information for everyday living. Now get off your arse and into the kitchen!
Favorite Music:
All sorts. Madness, The Jam, Old-school hip hop and bit of this, bit of that. I actually enjoy the crap on the radio as well, much to the missus' disappointment.
Favorite TV Shows:
Not much. I like Tony Bourdain's show, No Reservations about travelling & food. Nice combo. Wouldn't mind doing a show like that. Jamie Oliver's shows are great motivation for cooking from your garden. I quite like that a lot.
What is your current exercise routine?
Here's where the missus gives a laugh because I'm a bit on the insane side when it comes to exercising. M-F I'm at the gym by 4:30am, pumping iron and getting my cardio on. We usually do the stairs on the weekends (a set of stairs consists of 170 or so steps to climb) or bike down by the beach.
What diets have you tried?
Power bars and drinks, you name 'em I've tried them. My diet routine now is pretty strict and regimented, though I tend to feel that it's more for fueling my body with healthy foods vs. dieting. I learned a lot from the Body for Life program.
What things do you want to do before you die?
Have children, skydive, drive a formula one car, have my own television show, publish my recipes, give back to the community, have my own vegetable garden, hang out with Tiger & Padraig.
What is your favorite book?
Kitchen Confidential by Anthony Bourdain.
