Desiree Fickers Pumpkin Muffin Recipe! courtesy of a post by blogger swimbikerunguy

Here's the scoop:

They're supposed to be gluten free, but that sounds bad.

1 & 3/4 Cups Flour (I've used white and whole wheat - both work fine)

1 & 1/4 Cups Sugar (I can cut about 1/4 cup out if you use apple sauce or something else - molasses.. splenda works too)

1 TBSP Baking powder

1/4 TSP salt (I think it needs a little more)

1 TSP Cinnamon (you can never have too much)

1/2 TSP Nutmeg

1/2 TSP Ginger

1/4 TSP Allspice

1/8 TSP Cloves (can add more to taste)

- Mix all that together in 1 bowl

In another bowl:

Mix 1 Cup pureed (canned) pumpkin

1 TBSP Soy Yogurt (can use reg yogurt. I used FF Vanilla yogurt)

1/2 Cup Soy milk (I've used skim, whipping cream, whole milk...Super VANILLA SOY IS GREAT TOO!)

1/2 Cup vegetable Oil (can use Flaxseed oil instead)

2 TBSP molasses (I use 3-4) (can substitute honey)

extra:

I use about 1/3 cup- 1/2 cup All Bran + 1/3-1/2 cup Oatmeal

Mix everything together and put in muffin tray - should make 8-12 muffins

bake at 400 for 25-30 mins (keep it closer to 20mins if your oven gets extra hot and/or you're using a metal pan)

sorry I don't have a nutrition brkdwn for this since I pulled it from the web. It's in a fit or tri magazine somewhere and I believe it gives a general breakdown, but for the life of me I cannot recall which one it is/was.

I recently got some feedback from a nutrition guru who advised that if you make the recipe with a special gluten free flour... it'll be low gluten. However I'm unaware of what brand is out there... surley the red mills ? (organic) line offers something in this variety.

These are not gluten free. Wheat flour contains gluten.
